Energy Bites

Happy Monday everyone!

I try to keep this blog filled with as much pretty as possible but today I had to share a little something different.

Those who know me know how much I love to snack. Anytime I have a big day out or long drive I pack a ton of snacks to keep me going (and happy!). I would just rather eat a lot of small things in place of a large meal, especially early in the day.

I recently found a recipe for no bake energy bites online and simplified it a bit. These are so easy and so tasty!

For all you on-the-go vendors, couples and generally busy people, give these a try, let me know what you think!

Here’s what you’ll need:

2 cups old-fashioned oats
1 and 1/2 cups shredded coconut  (I used unsweetened)
1 cup peanut butter
1 cup ground flaxseed
2/3 cup honey (can substitute with maple syrup)
2 teaspoons vanilla

Combine all ingredients in a large mixing bowl and form bite size balls and place in tupperware. I kept mine refrigerated.

So easy right?

Meet Christine

Happy Friday everyone!

The TCD team is growing and we are so excited to introduce our 2016 Summer Intern, Christine.

Christine comes with extensive event planning experience, a passion for travel and an appreciation for the idea that the simplest things are the prettiest. We really like her.

The summer intern position is a great way to get an introduction into the day to day of wedding planning. Christine will assist with administrative duties, social media and join the team on wedding days.

I sat down with Christine to ask her a few questions about life, the industry and her new role. Hope you all enjoy getting to know her as much as I did!

1. How did you find TCD and how did you get involved?

C: I was in search of an internship for the Summer of 2016. I came across a lot of companies from the Waterloo Region, but the Creative Details is the company that resonated with me best. I decided to reach out to TCD, and Catherine got back to me very quickly with open arms. We met for a coffee, got to know each other a bit, and now here I am…an intern with her company. I truly could not be more excited for this opportunity!

2. What is your favourite part about event/wedding planning?

C: My favourite part about event planning would definitely have to be seeing the reaction of the attendees and the client. It always feels so wonderful to know that all of the hard work and effort that you have put into creating the event is appreciated and recognized by those that attend it.

3. What inspires you?

C: Life is my inspiration. It probably sounds very broad, but it’s true. I can’t tell you how often I find myself walking down the street and catching some sort of inspiration from the things that around me. Whether it be nature, lighting, people…you name it, it’s all inspiring for me!

4. Favorite trend for 2016?

C: My favourite trend that I’ve been noticing recently is couples veering away from traditional round tables, and instead utilizing rectangular and square tables. Personally, I think that it adds that touch of intimacy and completely alters the mood of the event. I absolutely love it!

5. What should our readers know about you?

C: Considering this is a wedding planning blog, I should probably tell you all a little bit about the things that I love because well, that’s what weddings are all about: Love.
